FETA CHEESE BRUSCHETTA

2- tomatoes seeded and chopped
1- tsp. fresh garlic
2- tbsp. fresh basil chopped
2- tbsp. chopped onion
tbsp. red wine vinegar
tbsp. extra virgin olive oil
2- oz. feta cheese crumbled
4- whole French bread slices-cut diagonal

Put everything in a bowl. Toss until well combined. Refrigerate one hour. Preheat oven to 450°. Remove mixture from refrigerator. Drain any excess liquid. Place slices on cookie sheet. Place in oven - 2 to 3 minutes until golden brown, then remove, spoon mixture evenly on top of browned bread. Broil 2-3 minutes until Feta starts to melt. Remove and serve. (Makes 4 pieces)
